Casa Vallés has treated the Gilda as house identity since 1942: olive, anchovy and guindilla pepper on one stick, salty and gone in a bite. La Viña on 31 de Agosto made burnt Basque cheesecake famous, dark on top on purpose and still soft in the middle. Txepetxa cures its anchovies in oil and vinegar and plates them as the whole point of the visit. You eat standing, and it covers about 1.2 km.
